With odds like that, only a dream can keep you focused on the prize—and that’s exactly where Tameka Christine, the owner of Carte Brunch, a catering company in Norfolk, Virginia, has her sights set. Unlike other games of chance, this isn’t a game. Her plans are rooted in a deep love of cooking. Tameka has now elevated her company to include her first physical location that is located in Portsmouth, Virginia.

They want good food which is one of my sayings. And if it comes with a creative twist? Even better. If you can prepare a meal that sparks a moment of joy—that lip-smacking, eyes-closed kind of reaction—then you’ve already won.
Based on what my taste buds witnessed at a recent food tasting, she’s definitely on her way. Here’s what I had and my thoughts:

Mac Me Later
Includes: Creamy five-cheese macaroni tossed with tender seafood bits and baked until golden bubbly.
My Review: The first thing that stood out was that I could actually taste the seafood. I know that might sound odd, but too many restaurants throw flavorless chunks of lobster on a bed of mac and cheese like they’re doing the lobster a favor. It’s a great combo in theory, but it takes finesse. With this dish, I tasted real salmon and crab meat in every bite. Well done.

Bird & Bougie
Includes: Crispy golden fried chicken stuffed into Belgian waffle cone served with hot honey or maple syrup. My Review: My first thought when I saw the presentation? I had a sudden craving to scoop some ice cream into that deep waffle cone. But what I got was even better—perfectly seasoned slices of chicken! And YES—seasoning matters. Not everyone understands the difference between seasoned and salty, but this hit the mark.

The Mocktail Flight
My Review: Who says you need spirits to lift your spirits? I tried some handcrafted mocktails with fresh-squeezed juices, herbs, tasty syrups, and just the right touch of curiosity. Every glass was a celebration—bold, refreshing, and completely booze-free.

Carte Brunch Signture Stuffed Waffles
My Review: This one caught me by surprise—in the best way. It was like two waffles in one, living in perfect harmony. Let’s be honest, a halfway-decent waffle is always looking for a lifelong partner—and I officiated the wedding on my fork. This might’ve been my first stuffed waffle, but it won’t be my last. Cooked to perfection and fluffier than a pillow’s pillow—with a filling that made it even more satisfying. I could see this becoming their signature dish.
I believe the owner is already thinking ahead—she’s launched her own product line of select foods. Who’s waiting for big box stores like Walmart or Whole Foods? Not her! You can buy her products right on-site and make them at home. So, when I think about people risking it all for a dream—her approach doesn’t feel like a gamble. It feels like a smart, demand-driven move.
